Hi, I'm Ildiko, and I'm on a mission to revolutionize the world of healthy eating. Due to my professional background and personal health conditions, I embarked on the journey of developing healthy foods years ago. My latest project is to create the healthiest cake ever made, using only high-quality plant-based fibers. This cake is not only low in calories but also carb-free or low-carb, making it a perfect treat for everyone, including those on keto, weight loss or diabetic diets, or just for maintaining a healthy body. There are no controversial ingredients - only pure, chemical-free components from trusted sources. I have invested all my savings and money into this project. I've tried everything to complete this incredible project on my own, but unfortunately, I've exhausted all possible options. As a single mother living in a rented apartment, I can't even apply for a bank loan, so crowdfunding remains my only option. This cake does not contain:

Thanks to its high fiber content, it keeps you full for a long time, prevents blood sugar fluctuations, and nourishes the microbiome.

Creating a cake entirely made of fibers that looks and tastes just like a traditional one, and is suitable for industrial production, has taken years of hard work. I can proudly say that I know at least 2000 ways it doesn't work, and one way that it does! It's like building a multi-story house out of sand and water—until you figure out how to make these two form a stable structure, it collapses every time, but once you find what holds it together, nothing can stop you.

Comparison with other low-carb products:

The low-carb products currently popular in the market mostly contain the following ingredients:

  • Gluten: Wheat protein, a severe allergen that can severely damage the gut flora if consumed in large amounts and regularly. Popular because it's easy to work with, gives good texture, and is cheap. Since it contains no carbohydrates, it's well-marketed.
  • Modified Starches: Beyond being treated with chemicals during the modification process to achieve better texture or gelling, these are digestible carbohydrates. The rate of carbohydrate absorption varies individually, but in most cases, they affect blood sugar levels and fall into the category of easily digestible, high glycemic index carbohydrates. Popular because they are suitable for bread products, easy to work with, cheap, and marketable as "modified."
  • Almond Flour: An allergen with high energy content. Even the defatted version contains fats, which include omega-6 fatty acids. The oxidation of omega-6 fatty acids under heat is particularly problematic, as these fatty acids contain multiple double bonds that are unstable and easily oxidized. Oxidized fatty acids can damage cell membranes, increase oxidative stress, and contribute to diseases such as heart disease, cancer, and Alzheimer's. Although popular for cakes and delicious, its high energy content makes it less ideal for those aiming to lose weight.
  • Chemically Modified Fibers: Chemically modified fibers, such as Hydroxypropylmethylcellulose (HPMC), Sodium Carboxymethylcellulose, and Carboxymethylcellulose (cellulose gum), are made with chemicals that can remain in the final product. These chemicals, such as methyl chloride and propylene oxide, can potentially harm health by causing oxidative stress and inflammation in the body. Often used in the food industry for texture improvement, their effect is consistent due to chemical modification.
  • Other Low-Carb Flours: These can include soy, peanut, nut meals, or lupin flour. They also have excellent texture-forming properties and are significant allergens that can cause severe, life-threatening anaphylactic reactions in some cases. They are easily accessible and familiar materials.

In contrast, the fiber blend from which our cake is made contains only organic, water-soluble and insoluble fibers. These fibers are extracted using steam, hot air, or milling/sifting technology without chemical intervention. Other added ingredients are eggs, water, baking soda, and ascorbic acid (Vitamin C), erythritol or allulose with stevia and monk fruit extracts as zero calorie sweetener. For flavoring, we use Bourbon vanilla powder and cocoa fiber.

This includes testing two preservative methods to ensure our cakes remain fresh without any chemicals or added harmful ingredients. A longer shelf life produces a more stable market presence and results in a product that is available more widely, across multiple countries. I have already managed to finance the food analytical testing of the fiber blends that serve as the base for the cake out of my own pocket, however, to carry out further testing, I NEED YOUR HELP.
