  • With a background in gastronomy, a degree in plant production and farming, and a successful coffee roasting business already under my belt, I bring a wealth of experience to this project. Growing up in the Danube Bend has given me a deep appreciation for the region’s potential. Currently, I am furthering my expertise by studying to become a permaculture designer, equipping me with the tools to create a truly sustainable and impactful venture.

A Vision for a Sustainable Bistro in the Danube Bend


The Danube Bend is a region of breathtaking beauty, rich history, and vibrant potential. Yet, despite its influx of tourists every summer, the local gastronomy scene remains underwhelming. The area lacks authentic, high-quality dining options that truly reflect the essence of the region. What it needs is a culinary revival—a place that bridges tradition and modernity, celebrates the bounty of the land, and supports the hardworking local community.

We envision creating a bistro-style restaurant in North Hungary that is more than just a dining spot; it’s a movement. Inspired by globally renowned establishments like Noma in Copenhagen, our concept focuses on sustainability, local sourcing, and an intimate connection with the land. This isn’t just about food; it’s about forging a new path for the region’s gastronomic identity while nurturing its economy and environment.


The Concept: Local, Clean, and Farm-to-Table


Our restaurant will be a true celebration of the Danube Bend’s untapped potential. By collaborating with local farmers, artisans, and makers, we will craft dishes that showcase the region’s finest ingredients. Everything from vegetables and fruits to meat and dairy will come from sustainable, ethical sources, including our own backyard garden. With a small yet meaningful setup of chickens for eggs and meat, and goats for milk and cheese, we aim to produce fresh, quality ingredients on-site to enrich the dining experience.


Why Now, Why Here?


The Danube Bend was recognized during COVID as a safe haven for many young families, showcasing its ability to connect communities. However, it remains an underdeveloped area in terms of quality goods, local farming support, and a sustainable future.

Currently, the Danube Bend offers restaurants that rely on cheap ingredients, imported products, and overpriced menus that don’t reflect the true value of local flavors. Tourists arrive expecting to experience Hungary’s rich culinary heritage but are often left disappointed. This creates a void—an opportunity to establish a destination for travelers and locals alike to connect with authentic, clean, and thoughtfully prepared meals.

Our mission is to elevate the region’s reputation while making a real impact on the local economy. By prioritizing local partnerships, we’re not only delivering exceptional food but also giving back to the community. Supporting small-scale producers means preserving traditions, creating jobs, and fostering a sense of pride in the region’s resources.
